Baking Again...


Addie's birthday is tomorrow (Flag Day!) A month ago, she had a very specific birthday cake description. She said she wanted an angel food cake with a sloth on one side, a turtle on the other, a heart between then, and the hole in the middle filled with whipped cream. Yeah. That's a challenge! I bought the egg whites to try a practice cake, and then we made an orange chiffon cake to use up some of the oranges we got from our daily school lunches. After trying that, she decided THAT was her new favorite cake and wanted one of those for her birthday.

I started looking at recipes online and paying attention to what is in the grocery store and ads. It's strawberry season, so I thought maybe a cake with strawberries might be yummy. Addie decided last week that she'd be happy with ANY cake for her birthday, so it was my turn to decide. Yay! I narrowed it down to two strawberry recipes: an easy vanilla cake with strawberries baked into it with a strawberry sauce, or a more complicated pink-all-the-way-through strawberry cake with pureed strawberries in the batter. I think we'll make the easy cake for my birthday in 3 weeks (or Father's Day next weekend), because we tackled the pureed strawberry cake yesterday. We also wanted to make it a rainbow, because we love to make things more complicated... haha! I can say I've now used food coloring gels, and I've learned that a little goes a LONG way! My fingernails are still blue and yellow!



The recipe turned out great, though if I were on one of those baking shows that I love to watch, I would never have finished in time! My cake tastes amazing, though the frosting is a little less than perfect. However, I think Addie is going to love it! We're hiding it in the fridge so we can surprise her with it tomorrow. The secret is that I snuck in some strawberry puree and chocolate frosting in between the layers, so it won't be too sweet. Can't wait to see how it tastes tomorrow!
